What I Ate Wednesday #4

Hello everyone! I hope you all had a good weekend :) Mine was pretty busy with celebrating a couple of friends’ birthdays. I will admit that my eating wasn’t close to perfect, but after eating clean for weeks, when I had chips, I felt like I was eating air; it was not filling me up! I was used to having protein not just carbs. I felt much better once I had a bun-less burger! Lesson learned :) On Sunday, I was back to clean eating and felt MUCH better!

Without further ado, here’s what I ate yesterday.

For breakfast, I had a slice of gluten-free bread with low sugar strawberry spread, plain Greek yogurt with blueberries, apple chunks, ground flax seed, and chia seeds.

I went to Aqua Fitness in the morning, and after my shower, it was almost noon already, so I had a small snack which consisted of almonds and craisins {dried cranberries}

Having had chicken twice on Monday, I wanted something different. Hard boiled eggs came to mind and I wanted an egg salad wrap. The salad consisted of shredded carrots, red bell pepper, celery,and jalapeños mixed with plain Greek yogurt instead of mayonnaise. I had edamame on the side.

My friend came over for dinner; I prepped dinner while we chatted. I made Jerk Chicken with Stuffed Mini Bell Peppers from The May  issue of Cooking Light. I didn’t add the serrano chile as my friend doesn’t like spicy foods, but it was still delicious!

After dinner, we watched Journey 2: The Mysterious Island which was a little on the cheesy side, but it was a nice light movie for a weeknight.

As you may have noticed, I missed my afternoon snack :( I went to grab stuff for dinner from the grocery store, and then my friend got to the house shortly after I arrived, so I started dinner, and didn’t want to ruin my appetite. However, when I was at the store, I brought some brown rice cakes which I’ll try today with almond butter.

    Con mi estómago enfermo he tenido que cambiar mi manera de comer, pero aun así creo que la comida me está haciendo daño. Hoy almorcé dos huevos con salsa de tomate y una rebanada de pan integral. No tomo café pues igual me daña mi estómago.A media mañana comí dos rebanadas de melón. Para la comida prepararé pollo y una tortilla. a media tarde comeré algo de sandía y en la noche solo puedo cenar fruta…mi problema es que al comenzar la digestión me duele mucho mi estómago, los movimientos naturales son dolorosos, Ya me estoy preocupando. Tendré que ir nuevamente al médico y que me cambie la dieta. Algo está mal.

      Any idea what’s wrong? It could be so many things! I hope the doctor figures out what it is so you can fix it & feel better :)

  3. Your lunch sounds so good with that egg salad! I really need to try it on my own,I love eggs so much! :)

    • Thanks! Aside from the eggs taking forever to cook {the water just wouldn’t boil; I’m sure it was because I was keeping a close eye on it!}, it was pretty easy and quick to make! I definitely recommend and I’m not huge on eggs!
