What I Ate Wednesday #6

Happy Independence Day to my American friends! To my Canadian friends, I hope you had a good Canada Day.

We just got back from Toronto a few hours ago. We had a great time! For those of us living down south, summer is the best season to go and explore. I’ll post more on our trip and where we went this weekend, but for now, here’s what I ate today.


  1. Scrambled eggs with ham, “refried” pinto beans, corn tortillas, and a French Vanilla cappuccino from Tim Hortons. So delicious!
  2. I wasn’t hungry prior to my first flight but it was our long one so I went to see what GF items I could find. The fruit salad cups didn’t look so great so I got some nuts
  3. Once we landed and were on our way home, we placed an order for Torchy’s Tacos and picked it up along the way. I had Green Chile Pork and The Democrat tacos. I thought the Democrat taco was a little dry but the pork one was good :)

This month’s WIAW theme is Fun, Food, and Fitness. I haven’t taken any group fitness classes lately, but I am a big fan. My “workouts” this past week consisted of lots of walking while sightseeing Toronto. Toe’s been broken for 3 weeks and it’s still hurting :( I’m hoping in a week and a half, I’ll get the go ahead to get back to running.

Anyhoo, we’ll probably be going to bed soon as we’ve both got work in the morning.


  1. OMG torchys tacos love right here! I’m a big fried avocado or mr pink fan myself. My mom lives down the street from a torchys so I love when I stay with her and I can just hop on through the drive through. So glad that I have found another Austinite!

  2. Hmmm… I’ve never had refried beans before, that breakfast looks super tasty and filling! I’m glad your flight went well, how long was your longest? I just love flying :)

      The beans my mom made aren’t your typical; they’re more like mashed beans–way healthier! I can’t remember how long our flight to Fiji was.. I think 10 hours. We fell asleep when taking off from LA {around close to midnight on a tuesday} then were awakened for breakfast 2 hours before we got to Fiji… which was around 3am Fiji time on thursday. How about you?

  3. Not nearly that long. While I love to fly, the prices prevent it, and also mean a lot of layovers :(
