WIAW #12

 

It’s been a few weeks since I’ve done a WIAW, but it’s back now :)

As per my post on Hashimoto’s last week, I’ve had to make a change to my breakfast routine and I’m now having yogurt for breakfast. Our local grocery store has been out of Chobani lately, so I’ve had to go with Fage yogurt. I really enjoyed the honey flavour, although it was a little hard to mix.

 

For my morning snack, I wanted an apple with almond butter, but I was all out, so I had cashews instead.

I’ve been craving salads lately and I had some leftover rotisserie chicken, so I made a lettuce with romaine lettuce, baby spinach, strawberries, red bell pepper, and chick peas. I put some key lime juice as my salad dressing. The lime juice brought out the sweetness of the strawberries.

After my workout in the afternoon, I had a Strawberry Core Power.. I LOVE it!

For dinner, we decided on a new recipe: Pork Chops with Roasted Apples and Onions from Cooking Light {I used gluten-free all purpose flour}. It was really easy to make and it was ready in no time! I accidentally used the dried thyme instead of the fresh one I had in the fridge, but it still turned out well. We could have used a little more gravy but it was enough for the two of us. The pearl onions were a nice change, and I’ll be incorporating them into more recipes. We both gave the recipe an A.

    • Thanks! I actually don’t usually have them in a regular salad, but I needed some carbs in there and thought it would be a great way to add them! I’ll be adding them more regularly now :)
