WIAW #41 – Changing it up

Hello, all. I hope you’re having a great week! Thanks to Jenn from Peas and Crayons for hosting the link party !

The last week has been a rather busy one which included wedding cake tasting and running the Austin Half Marathon. I’ll post about the Half later on this week (probably tomorrow). But you guys are here for my eats, so here are yesterday’s eats!


strawberry smoothieFirst thing in the morning, I went to see my dietitian/personal trainer for a PT session. It was a tough one, so I had a strawberry smoothie for breakfast.

For lunch, I didn’t like my protein options, so I chose black beans with goat cheese and had a bowl of grilled red bell peppers.

black beans and vegetablesI had a dentist appointment in the afternoon, so when I got home, I was starrrving! My fiancé was just getting home from work and a trip to Target where he picked up some cat food and yogurt.


For dinner, I made Halibut with Bacony Corn Sauté from Cooking Light and steamed asparagus. The Bacony Corn Sauté was really good! It didn’t take too long to make.

  1. Wow that whole day looks delicious :D I actually used that recipe from cooking light as inspiration for a sweet corn and bacon risotto a little while back that i topped with salmon. It was delicious!!

  2. I was suppperrr close to buying a wedge of goat cheese at the grocery store two days ago, but didn’t because I didn’t have a recipe planned for it! BUT seeing the pic of your black bean goat cheese combo makes me totally regret my decision!

    • I looove goat cheese and I usually don’t wait to have a recipe to buy it. I also love to top my salads with it. I’m drooling just thinking about it!!

  3. That corn saute looks really good, but your dinner really made me regret not picking up the asparagus I saw at the market today! I am definitely going to have to get some next week!

    • I hope you did!! Got any asparagus recipes you love? I usually just steam it or roast it.

      • I’ll be picking some up on Friday! I love baking them in the oven after they are breaded in panko with oregano and minced garlic. I also like to pan fry them with a tiny bit of coconut oil with garlic, onions, and some mushrooms. Or steaming them, which is also a hit with my 18 month old.

  4. The corn looks super yum. I’m always trying out new things. That’s very similar to a recipe I make though. I grill the corn first, then add the other veggies, goat cheese, and basil or cilantro!
