{Gluten-Free} Turkey Quinoa Muffins
When the boy decided that he wanted to see more progress from his personal training sessions, we both went to see his personal trainer to get some pointers in regards to eating. His trainer gave him some guidelines to follow, and one of the items he suggested for a snack was turkey muffins as a snack and gave us a vague recipe. I googled some recipes and found Gina from Running To The Kitchen’s recipe. We didn’t have all the ingredients at home, so we improvised. We felt they needed a little more flavour so I kept tweaking them each time I made them. These are about 100 calories and you can use whatever vegetables you have on hand.
{Gluten-Free} Turkey Quinoa Muffins

1.25 lb ground turkey {at least 93% lean}
¾ cup cooked quinoa
½ cup gluten-free rolled oats
2 egg whites
1 whole egg
2 carrots, shredded
½ red bell pepper, diced
½ red onion, diced
¼ cup chopped cilantro
¼ cup poblano peppers, diced
¼ cup yellow squash, diced
2 tsp cumin
1 tsp red pepper flakes
1 tbsp dijon mustard
salt and pepper to taste
Directions
- Preheat oven to 375F.
- Line or grease a muffin pan.
- Put all ingredients in a bowl and mix either by hand or with a spatula {I prefer the spatula}.
- Use a small ice cream scoop to make a ball and place it in the pan
- Bake for 35-40 minutes. The bigger the muffins, the more time they will need in the oven.
